ReplyDeleteI couldn't get the email thing to work but my fav dessert is Chocolate Zucchini Cake. You seriously don't even taste the zucchini!!!!!! So here's the recipe....
ReplyDelete1/2 cup soft butter
1/2 cup cooking oil (can use 1/4c applesauce 1/4c oil)
1 3/4 cups sugar
2 eggs 1 tsp vanilla
1/2 c sour milk (add small amt of white vinegar to sour milk)
2 1/2 cups flour
1 tbsp cocoa
1/2 tsp cloves
1/2 tsp cinnamon
1/2 tsp salt
2 cups PEELED grated zucchini
1/2 cup choclate pieces
1/4 cups choppend nuts
In a mixing bowl, cream butter, oil and sugar. Add eggs, vanilla and sour milk; blend. Add flour, cocoa, baking soda, cloves, cinnamon and salt; stir together. Add zucchini; mix well. Spoon into greased and floured 9x13 baking pan. Sprinkle with chocolate pieces and nuts. If using a glass pan, bake at 325 about 45 minutes or until cake tests done. If using a metal pan, bake at 350 about 40 minutes or until cake tests done. Does not require frosting.
Notes: I don't add the salt or cloves and it tastes wonderful. I also have use the applesauce and substitue remaining oil with flaxseed meal. :) ENJOY!
Wow! These are awesome! Love, love, love each one of them!!
